Head Chef Ryan Allen have been in Dubai for the past 8 years. He came to Dubai after completing his internship at the Hilton Hotel in South Africa. His Dubai career began at Zuma as a Commis, where he remained for 4 years. Chef Ryan then felt that he needed to learn something new and joined the pre-opening team for Qbara, where he spent 3 years. During that time, he competed in the Timeout young chef of the year competition and finished in the top 3. After Qbara he went onto Jean George until the opportunity to open Weslodge Saloon as Head Chef came his way. Chef Ryan feels Weslodge is close to his heart as he has had a lot of influence with both operations and menu. Weslodge has won both Best New Restaurant from BBC Good Food and Best North American/Caribbean Restaurant from Timeout Dubai.
