Cesar Bartolini, Chef de Cuisine of Gordon Ramsay’s Bread Street Kitchen & Bar at Atlantis, The Palm, has an inspiring resume with more than 15 years of experience to showcase his expertise and passion, working in some of the finest hotels and the most challenging restaurants round the world.
Born to a large Argentinian family, Cesar realized at a very young age that the culinary world was the place for him. Like many professional chefs, his love of food was fostered during his childhood, when he started cooking with his mother for their weekly family gatherings.
Cesar grew up in Buenos Aires where he studied at the Gato Dumas Culinary School. After graduating, he moved to Ireland for a role as Chef de Partie at Clontarf Castle Hotel and honed his culinary skills across a number of respected Argentinian and UK kitchens, until joining Gordon Ramsay Holdings at Foxtrot Oscar as Sous Chef in 2008. The following year Cesar moved to Plane Food at Heathrow Airport, quickly earning the title as Head Chef, catering for an average of 29,000 customers a month and overseeing a team of 34 chefs. During that time the ambitious, hard-working chef also penned a cookbook, “The Food and Cooking of Argentina” which features signature recipes from Argentina and South-America.
In 2015, Cesar was asked to join Bread Street Kitchen & Bar at Atlantis, The Palm, and prepare the team for the grand opening in October. As Chef de Cuisine, he is currently leading a team of 28. Cesar drives the daily operations of this dynamic kitchen and keeps pushing the team to continuously strive for perfection by improving the quality and consistency of the food. Having earned the complete trust of Gordon Ramsay, he has perfected the menu and already earned industry recognition for the signature dish Beef Wellington, which was named one of the best dishes of 2015 by Time Out Dubai.

Atlantis, The Palm is a 1,539 room, ocean-themed destination resort located at the centre of the crescent of The Palm in Dubai. This US$1.5 billion joint venture project was developed with Dubai Government owned, Istithmar. Opened in September 2008, the resort utilizes the 46 hectares site with 17 hectares of water park amusement, further marine and entertainment attractions and a collection of some of the most renowned world-class chefs including Nobu and Giorgio Locatelli. Atlantis, The Palm offers an unprecedented entertainment centre, an impressive collection of luxury boutiques and shops and extensive meeting and convention facilities. It is home to one of the largest open-air marine habitats in the world, with some 65,000 marine animals in lagoons and displays including The Lost Chambers, a maze of underwater corridors and passageways providing a journey through ancient Atlantis.
